BONANZA, a student-led food showcase organised by students of the Bachelor’s in International Hospitality Management at the Faculty of Hospitality and Tourism Studies (FHTS), The Maldives National University (MNU), provided students with an opportunity to apply their academic knowledge and skills in a practical setting.
The event was organised as part of the students’ Food Service Management and Concept Development module, enabling them to translate concepts explored in the classroom into an engaging food and beverage experience for a wider audience. Through the initiative, students gained practical exposure to planning, presenting and communicating food concepts beyond the classroom environment.
The food showcase provided students with an opportunity to demonstrate their culinary skills, creativity and knowledge while engaging directly with visitors. Presenting their food concepts to an audience enabled students to apply their learning in a practical context and develop greater confidence in communicating their ideas.
BONANZA also exposed students to a variety of food concepts, flavours and business ideas presented by local vendors. Engagement with vendors provided opportunities for knowledge sharing and enabled students to observe contemporary approaches within the local food and beverage industry, including changing consumer preferences and market trends.
Beyond culinary preparation, the event provided hands-on experience in areas relevant to food service management and hospitality operations. Through interaction with vendors and visitors, students developed communication skills, confidence and practical industry awareness.
The experience also encouraged students to explore how creativity, food concepts and business ideas can be brought together in response to developments within the food and beverage sector. Such experiences contribute to the development of practical knowledge and competencies relevant to future careers in hospitality.
BONANZA demonstrates how student-led initiatives and experiential learning can transform academic concepts into meaningful practical experiences. By engaging with food vendors, visitors and a range of food concepts, students gained exposure to different aspects of the food and beverage industry and opportunities to apply their classroom learning in practice.
The initiative reflects FHTS’s commitment to quality education, skills development and industry engagement, providing students with opportunities to strengthen the knowledge, practical skills, creativity and confidence required for the world of work and continued professional development in the hospitality industry.
