BIHM Students Gain Practical Experience Through Fine Dining Service

22 October 2025

Students from the Bachelor of International Hospitality Management (BIHM) programme at the Faculty of Hospitality and Tourism Studies (FHTS) of The Maldives National University (MNU) completed a two-week service practical at the FHTS Training Restaurant as part of their Food and Beverage Service and Introduction to Culinary Arts modules.

The Training Restaurant was opened to the public during the practical, providing students with an authentic hospitality environment in which to apply their academic knowledge and practical skills. The initiative connected academic learning with real-world restaurant operations and provided students with direct experience of working with members of the public.

During the two-week practical, students prepared and served a four-course fine dining experience. Each day featured a unique international theme, providing opportunities to explore different culinary traditions, menu concepts, food presentation styles and service approaches.

Under the guidance and supervision of lecturer chefs, students were involved in both culinary preparation and professional food and beverage service. This integrated learning experience enabled students to develop practical competencies across different aspects of hospitality operations while strengthening their understanding of professional service standards.

Working with real guests provided students with an opportunity to experience the expectations and responsibilities associated with professional restaurant operations. The public-facing setting enabled students to apply their knowledge while developing practical skills in service delivery, communication, teamwork and hospitality operations.

The two-week practical demonstrates the value of quality education that connects academic learning with practical experience. Through experiential learning and industry-oriented training, students were able to strengthen their skills, build professional confidence and gain greater awareness of the world of work.

Such opportunities contribute to students’ lifelong learning and professional development by allowing them to apply knowledge in practical settings and develop competencies relevant to future employment in the hospitality and tourism sector.

Through practical training at the FHTS Training Restaurant, the BIHM programme continues to provide students with opportunities to strengthen their employability, develop industry-relevant skills and connect their academic studies with professional hospitality practice.
